Asparagus, Brussel Sprout & Goat Cheese Quiche

Happy Sunday Friends,

It's another wet and dreary day in Parry Sound. Not quite the fall weather I have been longing for all summer.

Daniel and I decided to make the most out of our Sunday with a nice hike down the Rose Point Trail. Even though it was raining and overcast, the beauty was still overwhelming. The pugs really enjoyed themselves except for Pippin. He took an accidental head first dive into the creek. This is not the first time this has happened to Pippin, he is such a klutz. Luckily Daniel has very quick reflexes and was able to pull him out quickly. These pugs sure do keep us on our toes I tell ya...


   






























When we got back we decided to hibernate in the kitchen and whip up this nice fall dinner. I love making quiche because the recipes are easy to double and make for a quick reheated meal during the week. Win!

Asparagus, Brussel Sprout & Goat Cheese Quiche
(makes 2 full quiches)

Ingredients:
  • 2 Tenderflake reduced sodium pie crusts - I know.. I took the shortcut... don't judge.. :)
  • 1 tsp EVOO
  • 1 onion, chopped
  • Pinch of black pepper
  • 1-2 cup asparagus, chopped
  • 4 cups of spinach
  • 1 cup brussel sprouts, halved
  • ½ cup crumbled goat cheese
  • 2 whole eggs
  • 4 egg whites
  • 2 cup skim milk
  • 1 tbsp diced garlic
  • 1/4 cup chopped chives
Directions:

Saute onion, asparagus, garlic and brussel sprouts with the EVOO until soft. Fill pie crusts with mixture. Crumble goat cheese on top. Whisk eggs, milk and chives in a separate bowl. Pour mixture over veggies/cheese which are in the shells. Cook for 45 minutes at 375 degrees until cooked through and knife can be inserted and removed cleanly.


























This recipe packs a punch with the loads of greens and calcium. A healthy, delicious, meatless dinner.

Life is Good

On Friday, Dan and I got the keys to our rental. Since our house has not sold in the city, and we haven’t found anything to purchase in Parry Sound, we decided to find a rental to bridge our accommodations temporarily. 

We really lucked out and found a 4 bedroom home right in the town of Parry Sound, with a fenced in yard for the pugs. The house is currently for sale, but since the market is slow – we were able to rent it on a month to month basis. This is great for us since we didn't want to sign a lease and be committed to anything for the long term. The place is pretty sweet, asides from being right near train tracks (which everything seems to be in Parry Sound), it is totally furnished and all we needed to bring were our consumables and linens.

The pugs are enjoying the new scenery. They really seem to love the backyard and want to spend their entire day out there. We have sliding doors which lead from the kitchen to the backyard, so I can blog and supervise the pugs at the same time.

Our weekend was pretty relaxed, for the first time in a long time Dan and I didn't have anything on our schedule. If I were in the city, I’d be finding so many things to do around the house or would have kept myself busy packing. It’s been three months since Dan and I lived together, so it was nice to connect again and not have to worry about only having a weekend to spend together.

Saturday we spent most of our time cleaning our rental, and picking up some supplies we needed. Afterwards, since my mind was so clear of thoughts and my place was tidy, I finally had free time to have a leisurely run.

Running since the marathon has been an ongoing battle for me. It’s been 9 months since the marathon and I haven’t fully committed to a running schedule. I've found every excuse in the book to not get out there. The past couple of weeks I've finally rekindled my passion – stayed tuned for a blog post on returning to running after a break.

On Sunday Dan and I went for a walk to enjoy the scenery. We live 5 minutes away from a marina and they have seaplanes there that take off throughout the day. We just sat and watched for an hour or so. This whole place is so leisurely and relaxed. It’s been awhile since I really kicked back and enjoyed the sights like I did last night. This mindset is really hard to get to, and I’m glad I am there once again.

My friend recently gave me a journal and the quote on the front is:

"In the midst of our lives, we must find the magic that makes our souls soar" 

I think I've found that magic....

Anyways, I’m off to enjoy the rest of my vacation before I start my new job next Tuesday. Daniel and myself along with some friends are going to a country festival this Thursday-Monday (Boots and Hearts) and we cannot wait. Stay tuned for another post about that.

Following Our Dreams

(McDougall, ON - July 2013) 

Daniel and I are about to embark on a life changing journey. Hence the lack of blogging and routine in our lives at the moment. Thank you readers and friends for sticking by us and being patient.

For those readers that do not follow me on Facebook; Daniel moved 3 hours north for a job, about 3 months ago. This happened by happy accident. Daniel was keeping his employment options open, and I was perusing job sites for him. Well, one job came up that "fit the bill" per say, and I sent off his resume.

Dan: "Did you send my resume to a job in Parry Sound?"
Me: "Maybe"
Dan: "Do you know where that is"
Me: "An hour away?"
Dan: "That's 3 hours up north"
Me: "Oops"
Dan: "Well, I have an interview"

That's how it all went down. Dan went to the interview and had a really good feeling about the job. We decided he would rent a room up there, and commute back on weekends. In just a short time he felt really comfortable and secure with his job.

Dan and I always had a pipe dream of moving up north. We are very outdoorsy; love fishing, hiking, and well, any outdoor activity. We love the simplicity of life and this beautiful world god created. We seem to be country folk, that were born and raised "city". When I went to Parry Sound to visit a few times, I knew that's where Dan and I should be. It sums up everything we have been looking for in life. That's when it clicked - that we were ready to make this move together and leave the hustle and bustle of city life. Muskoka region.. here we come!

In the past month:

  • I secured employment in my field that I cannot wait to start on August 6th.
  • I gave notice at my current job which I have been with for 5.5 years. It's going to be really hard to leave my co-workers and wonderful clients that I have.
  • Our house is now on the market and we are currently searching for homes up there.

It has been a whirlwind to say the least. I am such a "Type A" personality, and I feel like we are flying by the seat of our pants for the time being. I'm really stepping out of my comfort zone. With our house not sold yet, we have had to find temporary accommodations to live. A miracle presented itself, and we have a 4 bedroom furnished house to call home till we buy a house. Thank goodness!

The one thing that centers me and makes this whole decision seem right, is the fact that I'm sharing this experience with my true love. Daniel and I have been through so much together, and sharing a common dream like this and watching it come true just warms the soul. This is meant to be.

Oh, and did I mention... the fishing is GREAT!?!?!


I'm sure once life settles a bit, I'll be back to posting some recipes and running stories. AND, I need to fill you all in on our 3rd addition to our fam! Stayed tuned!

My Erin Condren Planner Review

I've been eager to write this post ever since my Erin Condren planner arrived. But, I wanted to give it a few weeks until the novelty wore off and most importantly to give me the time to thoroughly use it.

Well, I still have nothing but excitement and love for my new daily life planner. It has made my life so much more organized!


I came across the life planner when reading blogs one night. I knew from the excitement of that blogger that I just had to have one too. I immediately grabbed my credit card and went to the website to buy one. Well, I was sticker shocked frankly. The 2013 life planners cost a steep $50 and up, depending on your add-ons. The sticker shock lasted a whole 5 minutes or so, and then I bit the bullet and added one to my shopping cart. What I learned shortly after was that shipping was $39.95 to Canada. $39.95 friggin dollars!

I was devastated.

I couldn't. There is no way I was spending $90+ of my hard earned money for daily planner. I would be stupid to (so I thought). I ended up bookmarking the website, and dreaming that one day they would go on sale or something.

Over the next following weeks I started to approach my busy season at work. I've always considered myself to be organized, but with some flaws. I have always been an obsessive Outlook calendar guru. But recently my office started to utilize the calenders publicly among the staff, so I found it difficult to use it for my work, personal and financial agendas. I then started to use outlook for business appointments and reminders. I used my iphone for personal items. I also had a physical calender at home for family reminders.

This process was not working for me. I was forgetting items frequently and my brain was spinning like a hamster wheel at night. I knew I needed to do something to get my life my organized.

Well, being the accountant that I am I convinced myself that the planner was not that pricey after all. I figured it out to be only $7.5/month to get my life organized and back on track. Not that bad when you think about it that way right? (This is the crazy Krysta inside me talking.. don't judge, I'm sure you all can relate!)

Ok, I digress... let's get back to how awesome this planner is!

When I ordered online they gave my an estimated shipping date of only 5 days from ordering. I thought that was amazing for a customized product. What was even better was that $39.95 shipping I paid for was expedited.

I was creeping my order status everyday, and when I finally saw that it shipped I squealed at my desk. It was estimated to arrive the NEXT day all the way from California! Expedited shipping is totally worth it.

When the box finally arrived I was over the moon. Even the box and inside packaging was adorable!



They even included personalized gift labels which I totally love!















As I was going through my package everything met, if not exceeded my expectations. That was until I saw the photo stickers I ordered... the photo's I received were not my family & friends. Sure they were cute and all, but I couldn't use them... that would be a little awkward. I contacted EC right away and they deeply apologized for the error. They expedited the correct photo stickers that I ordered and they arrived within the week.

Now let's get to the meat & potatoes of the planner..

The front & back cover is laminated, which I love. I will be carrying this planner with me everywhere so I need it to be durable.

It is spiral bound with a 1 inch metal spiral. Again, very durable for daily use.

There are beautiful quotes throughout the entire planner and they truly just make me smile.


At the beginning of the planner there is a designated birthday and anniversary calender listing. This is an amazing way to see all of your special friends and family days in one place!


There is a two page large spread for each month. It has a side panel for your monthly goals and to-do's. Again, there is a super cute quote at the top of each month. Each month has a laminated tab for easy access and organization.



Following the monthly spread, each week has its own spread where you can organize your items into Morning/Afternoon/Night. I find this much better than your typical hourly spreads. Each week also has its own goal and to-do listing.


Following the calendars there are lined and unlined sheets bound into the planner. This is great for notes, lists.. and anything else you can think of.

Each planner comes with standard stickers for special event and reminders. I am finding these super handy!


Near the end of the planner there is a folder where you can "Keep it together". I've been storing important receipts and current pay stubs in there. This is great because these items always ended up at the bottom of my purse.


The last page is a handy dandy clear pouch. It has more personalized labels and cards. I've been using it to store my winning "Roll up the Rim" tabs.


Like I mentioned, I have been using this planner for a few weeks now and I have nothing but good things to say about it. The colors make my seriously happy, and the overall cuteness just makes me smile.

If you are like me and like your lists and paper and are having a hard time converting to the digital world, I really think you would love it.

They also have a range of other products like wedding planners and teacher planners.

And - if you have Facebook be sure to like their page! They frequently have coupon codes and discounts.

To sum it up. Yes, the $90 was well worth it. I'm now an EC junkie and cannot wait to buy my next item!

May Cause Miracles

I wanted to share with you all the current book I am reading:


Now - I've never been one for self help books, or reading for that matter. But this one is changing my life and the way I view things on a daily basis.

I was introduced to this read after talking to my Chiro during one of my adjustments (Hi Erica!!). I have always had a problem with stress and more importantly have always dealt with issues of self love. I continuously judge myself in a negative way and it influences how I think of others. I'm jealous, bitter and generally unhappy with myself.

I purchased this e-book about a month ago and am currently on day 9 of the 40 day program.

The way it works is each morning you are given a daily affirmation and reading. You are told to set reminders throughout the day to keep you focused on your affirmation. At noon you have your "Miracle Moment" where you can take a minute and reflect on your daily goal. During the evening you are assigned a task to work on in your journal which takes you deeper into developing and deconstructing your self change.

So far this book has helped me identify my fears in life and I can see why I act a certain way and view thing the way I do. This book is all about changing your life and living each day to its fullest, positively.

My current daily affirmation is "I am willing to let go of my self doubt. I surrender to self love."

Powerful words, right?

What I love about the author, Gabrielle Berstein is that she is young and relatable. She wrote the book in an appetizing way for the 20-30 year old age group. Plus she has a great sense of fashion! Check her out on her FB page.

If you are looking to live your life in a more positive way and centering yourself in a way you never thought possible. I highly recommend picking up this read.

Photo Shoot

Dan and I had the pleasure of having our photo's taken by a very talented Niagara photographer a couple of weeks ago.

She posted on her blog today about our session and I am still at a loss for words. We are so thrilled to of had the opportunity to get some updated photo's of ourselves. These pictures truly show our passion, love and goofy sides.

I honestly think having the right photographer is key to capturing all these moments and I cannot recommend Jessica enough. Whether it be for a wedding, engagement, family or couple shoot.

She took her time with us and has a true passion for her photography. She knew exactly how to direct us to get the right shots, but also let our own personalities shine through. She was fun, talented, patient and a true artist at her work.
